Sweet potatoes add variety to any meal

   For too long, sweet potatoes have been stuck in a holiday rut.
Sure, you know how well they go with turkey and trimmings, but have
you ever considered how delicious they can be as part of an everyday
meal?

   In the first place, these potatoes are naturally sweet. In
addition, that deep orange color is a tip-off to real cancer-fighting
qualities, as they are full of the antioxidant beta carotene. Add to
that substantial amounts of vitamin C, potassium and fiber, and
you'll see that sweet potatoes do deserve to be considered
occasionally for inclusion in your daily meals.

   To bake a sweet potato, simply place it in the oven and bake it
at 375 degrees for an hour or until tender when pierced with a fork.
