Tip - Substitutes

Substitutions

       If the recipe calls for:      You can substitute:
       Cream Cheese                  Cottage cheese blended with butter or milk
       Jarlsburg                     Swiss cheese
       ricotta                       cottage cheese
       Romano                        Parmesan
       1 C all purpose flour         1 cup and 2 tbsp cake flour
       1 C sifted all-purpose flour  1 C less 2 tbsp unsifted all-purpose flour
       1 C cake flour                1 C less 2 tbsp sifted all-purpose flour
       1 C cake flour                7/8 all purpose flour
       1 C sifted self-rising flour  1 C sifted all-purpose flour,
                                     + 1 1/2 tsp baking powder and
                                     a pinch of salt
       1 tbsp flour for thickening   1/2 tbsp cornstarch or 2 tsp. quick
							 cooking tapioca
       1 tbsp cornstarch             2 tbsp all purpose flour or4 tsps quick
                                     cooking tapioca
       1 C buttermilk                1 C plain yogurt or
                                     1 tbsp lemon juice or vinegar + milk to
                                     make 1 C
                                     -- let stand 5 min. before using
       1 C heavy cream or
       half-and-half                 7/8 C whole milk + 1 1/2 tbsp butter
       l C heavy cream               1/3 c butter and 3/4 c milk
       1 C light cream               7/8 C whole milk + 3 tbsp butter
       1 C sour cream                1 C plain yogurt or

       1 tsp baking powder           1/4 tsp cream of tartar + 1/4 tsp
							 baking soda
       1 tsp baking powder, double
       acting                        1/4 tsp baking soda and 1/2 cup buttermilk
							 or sour milk
                                     or 1/4 tsp soda and l/2 tsp cream of tartar
       1 C dry bread crumbs          3/4 C cracker crumbs or
                               	 1 C cornflake crumbs

							 and 1/2 tsp salt
       1 C dark corn syrup           3/4 C light corn syrup + 1/4 C
							 light molasses
       1 C light corn syrup          1 C maple syrup
       1 oz unsweetened chocolate    3 tbsp unsweetened cocoa powder
                               	 + 1 tbsp butter or margarine
       1 oz semisweet chocolate      1 oz. unsweetened chocolate + 1 tbsp. sugar
       1 cake compressed yeast       1 pkg or 2 tsp. active dry yeast
       canola oil                    corn oil or vegetable oil
       peanut oil                    vegetable oil + a splash of sesame oil
       1 cup wine                    1 cup apple juice, apple cider, chicken or
							 beef broth
