Tip - Keeping Knives Sharp

KEEPING THOSE KNIVES SHARP!
Sharpening steel at a comfortable angle and with a relaxed grip. 
Start with the knife in the vertical position, lightly touching 
the steel at a 20 degree angle to the knife. Keeping your arm 
still and using a smooth wrist action, pass the blade along the 
length of the steel. Note that the completed action is basically 
an arc. Place the blade on the opposite side of the steel and 
repeat the sharpening motion. Repeat the above steps 3-4 times 
to sufficiently realign the edge of the blade.
