Tip - Keeping Fresh Ginger

Love fresh ginger but don't want to dry all the remaining ginger for
future use?  Peel then finely chop all the ginger from the root.  Lay
a piece of wax paper on the counter and pour all the ginger in a line
across the paper.  Now roll it up (like a "roll your own" cigarette)
and secure it in a few places with twist ties, then freeze it.  When
you need fresh ginger, just snip off what you need with kitchen shears
and refreeze the rest.
