Tip - Freezing Technique -- We Blanch At Blanching
LAZIEST FREEZING TECHNIQUE -- WE BLANCH AT BLANCHING

Freezing Fresh Peas and Beans the Lazy Gourmet Way
Shell the peas and beans, but DO NOT wash them. Take two heavy
duty trash bags (the black lawn and garden kind) and place them
one inside the other. Dump *UNWASHED, shelled peas or beans into
the bags. Fold the top over or twist tie the ends together. Place
in the freezer. To cook, simply remove the desired amount of peas
or beans, rinse well and cook.
*As long as you do not get the beans or peas wet by rinsing them
before freezing, they will not clump up nor get freezer burned.
*If you are freezing several different varieties of peas or beans,
write labels for each bag on freezer tape and stick them on.
That way you don't waste time with your head stuck in the
freezer digging through each bag (though in hot weather, this
could end up being a treat).
