Tip - Coating Vegetables

When I need to coat vegetables with oil before grilling or roasting, I
put a little oil (1-2 tablespoons, depending on how many vegetables)
with a little salt and pepper and/or other seasonings in a resealable
bag along with the vegetables (asparagus, mushrooms, onions, potatoes,
summer squash, zucchini, etc.) and shake the bag.  I use much less oil
this way and the vegetables tend to be much more uniformly coated.
