Soup - Halibut Seafood Chowder

Halibut Seafood Chowder

   8 slices bacon chopped
   1 cup chopped onion
   3 medium potatoes, peeled and cubed
   1 cup sliced carrots
   1 cup sliced celery
   1 pound halibut, cubed
   1 can chopped clams, drained
   1 teaspoon thyme
   garlic powder to taste
   salt & pepper to taste
   1 cup white sauce


In a large pot, cook chopped bacon with onion.  Add potatoes, carrots,
celery and seasonings.  Cover with enough water to cook potatoes.
When vegetables are near done, add halibut and clams.  While that is
cooking, make white sauce.  When white sauce is extra thick, add to
pot and stir carefully.  Cook until desired thickness.


White Sauce

Melt 2 tablespoons butter or margarine in sauce pan.
Add 2 tablespoons of flour.
Cook until bubbly without burning.
Add 1 cup of milk and whisk until smooth and thick.
