Whole-wheat Banana Waffles

Whole-wheat banana waffles
Makes 6 to 8 waffles

1 cup whole-wheat flour
1/2 cup all-purpose flour
1/2 cup quick-cooking oats
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon cinnamon
1 ripe medium banana
2 eggs
8-ounce carton plain yogurt
1/2 cup milk
1/4 cup vegetable oil
1/2 cup chopped pecans, optional


In a large bowl, stir together the flours, oats, sugar, baking powder 
and cinnamon.

In medium bowl, mash the banana with a fork. Add the remaining 
ingredients, except pecans, beating lightly until combined. Add 
banana mixture to dry ingredients; stir until combined. Pour into 
preheated waffle maker. Sprinkle on about 1 tablespoon chopped nuts 
if desired. Bake according to manufacturer's directions to chosen 
brownness. Recipe can be doubled. Leftover waffles freeze well.
