Vegetarian Italian Antipasto

VEGETARIAN ITALIAN ANTIPASTO

Vegetarian Italian antipasto is the ultimate dish to
use up your stockpiled tomatoes.  Not only can it be
eaten as an appetizer, salad or side dish, but it can
also be prepared well in advance.

Combine and seal in a plastic bag:

   2 cups cherry tomatoes
   1/2 lb. small whole mushrooms
   1 jar undrained, marinated artichoke hearts
   1/4 cup olive oil
   5 T. wine vinegar
   1/4 tsp. dried basil
   1/4 tsp. dried oregano
   1/2 tsp. dry mustard
   1 small chopped garlic clove
   1/2 tsp. salt
   Dash of pepper


Chill the mixture for 4 hours or overnight.
