Luchen Kugel - Noodle Pudding

Traditionally this type of luchen kugel is made with margarine, 
in accordance with Kosher law that prohibits serving anything 
made with dairy products together  with meat.  

(There is another kind that is made with cottage cheese and
sour cream traditionally served as part of "dairy" meals" if 
anyone is interested) This version uses butter.  Less traditional, 
but definitely more tasty!

Luchen Kugel (Noodle Pudding)

   1/2 pound broad noodles
   4 eggs, lightly beaten
   1/4 cup sugar
   1/4 teaspoon ginger
   1/2 cup butter, melted
   1 teaspoon salt, or less to taste
   2 cooking apples, peeled and diced
   1/3 cup raisins
   1/2 cup apricots, cut in sixths
   1/2 teaspoon cinnamon mixed with 2 teaspoons sugar


Cook and drain the noodles.  Mix them with everything but the
cinnamon-sugar.  Pour the mixture into a buttered 2-quart baking dish,
sprinkle the top with the cinnamon-sugar, dot with more butter and
bake at 350 degrees for 40 minutes.  This recipe is easily doubled.
