How to Make Yogurt

Time Required: 5-11 hours total (mostly unattended)

Here's How:
1. Heat 1 quart of low-fat milk to the boiling point for one minute.
2. Cool to 115 degrees F.
3. Carefully mix in 2 tablespoons of purchased plain yogurt.
4. Pour into a crockery bowl.
5. Cover tightly with plastic wrap and set in a warm place (such as the oven).
An ideal temperature of 110 degrees F will hasten incubation..
6. Check between 5 to 8 hours. Tilt the bowl to see if yogurt holds together.
7. Chill for at least three hours. Yogurt should be more firm now and ready to use.
Tips:
1. Yogurt will be watery if it sets for too long a time or you use too much starter.
2. The longer you incubate, the more sour it will be.
